Crayfish Mornay.... YUM!!!
You can also do this with fish if you rather. (Im not a huge fan of fish Cray is much better!)
The boys always come over to our place when I cook this, so this recipe will feed 5+ people.
4 Cray Tails
2 Tblsp Fresh Crushed Garlic (can add more if you like)
1 and Half Cups Plain Flour
6 tblsp Butter (3 for Sauce and 3 for Crays)
1lt Milk ???
1tblsp Chicken Stock
Half Cup White Wine
1 Lemon (Use Juice and Grate the rind and add to sauce)
Fresh Chopped Parsley
1 Cup Grated Tasty Cheese
Fresh Parmesan to put on top
Ground Salt and Pepper
To Cook Cray Mix...
Finely slice the tails up into little peices
Finely Chop Onion
In a fry pan melt butter and throw in Onion, Garlic cook till onion softens
Throw in Cray meat add white wine and cook for 5 minutes salt and pepper.
In a saucepan, melt butter, add flour and cook over heat for 5-6 minutes until mixture is hot, has a nutty smell and looks like breadcrumbs. Stir in the milk a little at a time, returning it to a smooth paste every time. Keep adding milk untill it has that sauce consistancy, Add Chicken stock.
Throw in Cray Mix, add lemon juice (Dont forget the Rind..) add Cheese and Parsley salt and pepper..
Serve with Rice or Pasta.. Yum!
Also The guys come over for Reef and Beef and I just add cream to the Cray mix and a little bit more Garlic to put over the steak.
